Yes, this makes us happy, a little rye in chocolate. The result is an award-winning bar with a savory bite and a delicate crunch. The nice thing is that both the chocolate and the bread come from the same bakery. We experienced this with our own eyes and mouths! Should you ever be near Suffolk…definitely worth a detour!

Ingredients: cacao beans (Ecuador Hacienda Limon), cane sugar, organic cocoa butter, milk powder, breadcrumbs, (wheat and rye) and sea salt.

The crumb of 100% rye loaf is added to this our Ecuador 60% Dark Milk. The mellow creaminess of the milk chocolate shows off the nuttiness and acidity of the rye grain.

Pump Street Bakery is een bekroonde bakkerij in het dorpje Orford aan de Heritage Coast van Suffolk. Na het perfectioneren van natuurlijk gerezen brood, zijn we begonnen met het maken van ambachtelijke chocolade van cacaobonen die we rechtstreeks importeren van single estates en coöperaties over de hele wereld, van boon tot reep. We zijn er trots op de fijnste ambachtelijke chocolade te produceren. Herkomst en proces zijn essentieel voor onze afgewerkte repen. We betrekken cacao van de beste telers die de bonen ter plaatse fermenteren en drogen. Vervolgens passen we ons roosteren, malen en concheren aan om de best mogelijke smakende chocolade te verkrijgen.
