Meet Pure Cacao Company of Wouter from the Netherlands and his wife Rennae from Jamaica, both have a background as a Pastry Chef.

They make real chocolate in Jamaica and use real Jamaican cocoa beans.

Bronze at the Academy of Chocolate. “We likkle but we tallawah” (we may be small in size but we are brave in character) says a Jamaican proverb. And that’s in this bar with Jamaican cinnamon.

Taste notes: a full-bodied chocolate, well rounded with notes of caramel, fresh red fruits and nuts. Deliciously warming due to the addition of cinnamon.

Cocoa by Dennis Bodie
The cocoa used by PURE Chocolate is supplied by Dennis Bodie. A farmer in a hamlet in the middle of the John Crow Mountains called Tom’s Hope (in Fellowship in the parish of Portland). To find Bodie’s farm, you really need the help of the locals. There are no street names, no house numbers, and the farm has no name either. Dennis Bodie is the farm. It’s his pride; He has pledged his heart and soul to his farm, does not go on holiday but, in his own words, enjoys the sound of the stream and the nature around him every day.

The cocoa is a cross between Criollo and Trinitario, fermented and dried by hand. When making chocolate, what happens at harvest and beyond is crucial. Thanks to the special process, the special cocoa taste of the original cocoa beans is preserved as much as possible.

Ingredients: cocoa beans, cane sugar, cocoa butter, cinnamon.
