‘Almendra Blanca’ means ‘white almond’, because the white colour of this bean makes the finished bar look paler than usual, despite the high cocoa content.

This special cocoa comes from the 30-hectare estate, which is used by Agrofloresta for training indigenous smallholder farmers participating in the Selva Tabasqueño project. In 2014, Hugo Francisco Chavez and his friends started Agrofloresta Mesoamericana to transform a degraded site into a diverse cocoa forest, which is used as a demonstration farm for organic cocoa cultivation in an agroforestry system using local tree species for wood.

Only ten local varieties are grown on the farm, which are the result of decades of selection of native cacao trees. They now represent some of the best Criollo Tabasqueño cocoa, commonly known as Almendra Blanca because most of these cocoas have white beans.
Since some Criollo Tabasqueño with purple cocoa beans are also available and have excellent taste characteristics, the farm does not only store cocoa beans with white seeds.

Availability is limited to quantities around 1 tonne/year. Of the 2021 harvest, only about 400 kg went to Europe

In het voorjaar van 2015 werd Georgia Ramon opgericht door Georg Bernardini en Ramona Gustmann in de wijk Oberkassel in Bonn. In november 2020 werd de fakkel overgedragen aan een jongere generatie. Het is geweldig om te zien dat Phillip Butzmann de fakkel heeft overgenomen en zich nu inzet voor het maken van heerlijke chocolade. Met zijn achtergrond in voedingsmiddelentechnologie en zijn ervaring als gecertificeerde chocolatier, is hij goed uitgerust om het succes van het bedrijf voort te zetten en verder te ontwikkelen.
