Trinidad is known for its biodiversity. Many species of birds and butterflies, as well as hiking and biking trails lead to caves and hidden waterfalls. The flowers and plants make every botanist’s heart beat faster. There are more than 700 species of orchids and 14 species of hummingbirds.

Art Pollard has processed the Trinitario cocoa beans from the South Sea island of Trinidad off the coast of Venezuela into this chocolate. The real vanilla pods complete the taste in its typical way.
