My cocoa beans are sourced through Direct Trade from Åkesson’s Bejofo Estate in North West Madagascar.

After harvesting, the cocoa beans were fermented for 6 days by Christian and dried for 5 to 14 days (depending on the weather) by Marguerite. Christian and Marguerite are completely Mesjokke about cocoa and prefer to listen to local Saleg folklore music. They were then expertly roasted, de-shelled, ground, and tempered in Utrecht.
