Origin: Sambirano Valley Madagascar
Variety: Trinitario cocoa and Criollo
Special features:
The Sambirano Valley is nestled between the sea and mountains and has a microclimate that provides warmth and moisture; the ideal climatic conditions for growing the cacao tree in the shade of tall trees. Trinitario beans and genetic dominance of Criollo. The cacao from Madagascar derives its specificity from this heritage by offering a full range of flavours: fruity, floral, spicy, or honey aromas.
From the planting of cacao to the end product, the entire production takes place in Madagascar. This is called tree-to-bar chocolate. Tree-to-Bar goes a step further and provides employment and optimal quality control. The chocolatier has complete control over how their cacao grows and is processed, and that the chocolate is made in the same country of origin.
The cacao plantation uses polyculture, which is home to significant biodiversity of plants and animals. The cacao plants on the plantation are grown according to the principles of organic farming. Furthermore, fair compensation for growers and employees is ensured. This provides a constant concern for the future of the land, including scholarship grants for the children of employees. A sustainable investment policy in planting, the factory, and employees.
